Sweet and Sour Sauce
1/2 cup of corn starch
1tbsp water
1tsp sweet and sour vinegar
1 and 1/2 tsp of sugar
1/2 tsp soya sauce
1 tsp oil from chicken stalk
mix well on high heat for 3 mins.
this can bedoubled or more for larger amounts.
this is chinese traditional sweet and sour sauce.

BEEF IN NEST WITH VEGGIES:
BEEF IN NEST WITH VEGGIES:
Requires 2 woks: 2 metal strainers , spatula , and a platter or large plate.
VegMix:
1 Broccoli head chopped up small
1 can Bamboo shoots cut up small
1 can Water Chestnuts chopped
1/2 cup fresh snow peas chopped
1 red and green pepper chopped up small
1/2 tsp minced garlic
1/2 tsp minced ginger
put veggies in Wok, with 2tbsp of peanut oil, cook in 5 mins high heat.
Sauce for veggies:
1 small bowl for sauce:
mix 1/2 tsp of starch
1/2 cup water
1 tsp oyster flavor sauce
pinch of salt and pinch of sugar
2 drops of sesame seed oil
mix the sauce well till its liquid form
Add sauce to veggies and pour in a shot of chinese cooking wine , or any kind you like
veggie mix will thickin form the starch mix. after 5 min leave lid on wok turn off heat.
Nest mix:
this requires 2 metal strainers:
prepare 2 cups of string potatoes fresh by chopping up with knife , pour 1/4 cup of starch on the chopped up potatoes then place
in 1 strainer ,form nest put other strainer on top to complete the form of nest, put in 2nd wok with 2 cups of peanut oil on high heat for 5 mins.take out of wok when done do not separate the strainers yet , set aside on plate .
Beef :
4 oz of flank steak or blade steak:
slice steak thin accross the grain
place slices of meat in 1 quart bowl
marinade meat with 1/2 cup chinese cooking wine or equvilant
add 1/4 cup of light soya sauce
2 tbsp of peanut oil
1/2 tsp of starch
mix in bowl for 2 min.
wok2 with oil from cooking potatoes
place beef marinade in wok cook for 5 mins.
Prepare large plate with romain letuce leafs covering the whole plate surface, seperate the strainers and put potatoe nest over the letuce and pour the beef marinde and veggie mix in the nest. serves 4 .
